Carrot Basundi

Basundi is a popular Bengali dessert.. I tried adding some carrot and bread to it and it turned so well.. Here is the recipe.




Ingredients
Milk  - 250 ml
lemon juice - 3 tea spoon
Carrot - 1 medium sized
Ghee - for frying
Sugar - 4 teaspoon
Cashew nuts - 10 pieces
Almond - 3 pieces
Bread slice - 1 1/2
Saffron or Saffron powder - some


1. Boil the milk in low flame in a heavy bottomed pan until it reduces to its half.

2. Add few drops of lemon juice to it so that the milk turns granular.

3. Keep stirring so that it does not stick at the bottom.


4. Meanwhile grate the carrots.


5. Place a kadai on stove and pour some ghee for frying.

6. Fry the grated carrot in ghee for 3 minutes until aroma comes. Do not over fry.

7. Grind the fried carrot and 5 cashew nuts in a mixer. Add some boiled and cooled milk and grind. Should be a coarse paste.. not as a smooth paste.



8. When the milk is granular and is in liquid state, add the ground carrot paste to it and let this boil for few minutes.

9. Add sugar and mix well.



8. Take 1 1/2 bread and cut into smaller pieces. Pieces should be so small.

9.  Dip the bread pieces in water and strain. Add this to the boiling basundi.

10. Fry the remaining cashew nuts in ghee and add to it.

11. Remove from the stove in the liquid state..

12. Soak saffron in milk for few minutes and add to it.



13. You can add some condensed milk to it for a better taste,but optional.

14. Grate almonds into very smaller pieces and add them.



15. Garnish with some more nuts.


16. Refrigerate for 2 hours and serve.. Yummy carrot basundi is ready... :)
